I’ve been on a real salad kick lately and wanted to share this beautiful lunch I had recently. In my opinion, the darker the greens and the more colorful the salad, the better it is.
Ingredients:
- Spinach and arugula
- Shredded cabbage
- Chopped carrots
- Diced boiled egg
- Shredded chicken
- Chopped red onions
- Sliced strawberries
- Sliced cucumber
- Walnuts
- Salt and pepper
I hope when classes start back in the fall I’ll still take the time to make my salads as beautiful as this one!
