I like to buy the pack of two raw chicken breasts at the grocery store and I’ll cook them both and freeze the second. This chicken is the frozen second breast!
I make my chicken salad a little differently than tuna salad—I chop one celery stalk, a bit of onion, and a one hard boiled egg. I combine that with shredded chicken breast, mayo, lots of relish and its juice, and salt and pepper. It’s so easy, and it makes for great lunch leftovers for the next few days.
