If I had known I could make this dish in ten minutes, it would have been a staple dish during busy nights during the school year. It made for great leftovers too.
I’ve made this sauce twice so far, once with penne and once with angel hair, and I’ve decided angel hair is my favorite by far–it just melts in your mouth. The angel hair only takes about six minutes to cook, and the sauce about ten. This is one of the quickest, most delicious dishes I’ve made in a while!
I started by sautéing halved grape tomatoes and chopped onions, minced garlic, salt and pepper, oregano, basil, and red pepper flakes in olive oil for a few minutes. Once the onions started to look clear, I poured in tomato paste and a little water.
After a few more minutes, I stirred cream cheese into the pan. Once it melted, I added tons of spinach leaves. I love spinach and try to sneak it into as many meals I make as possible. Once the spinach leaves looked soft and finished, it was ready for my pasta.
And you wanna know a secret? I tried it again a few nights later, but I was out of tomato paste, so I substituted with canned marinara sauce. It was just as good!
